Glutinous flour is gluten free. It is made from rice :) just because it has the word that appears to be "glutinous" it actually has no gluten it is not haha yeah sounds confusing . Also known as rice flour or sweet rice flour. Used in many Asian recipes too as well as gluten free recipes :)

It's what is used in many recipe that are gluten free. So no contradictions at all

Little bit of confusion here. You say this is a gluten-free recipe, then you specify that you use *glutinous* flour. I know I can easily use gluten-free flour as a replacement, but just wanted to make sure you saw you were contradicting yourself there in case you didn't see it. I look forward to trying this recipe since everyone in the comments section loved it so far.

Thanks for this recipe. Homemade kimchi is fun to make, able to be tweaked to personal flavor profile or desire & pretty exciting if one is creative & adventurous. On my 2nd homemade batch this weekend. Very excited about it. Thanks again!

You can store it for a while but you pretty much use all of the slurry! Sometimes if I have more I'll just cut up more daikon to make a kimchi daikon,

No need to re rinse the cabbage after it has been brined. Like the instructions say just drain and start your layering.

Currently in the process of making this! Can't wait to see how it turns out. 2 questions... How long can you store the remaining slurry? After soaking/draining the cabbage in brine, do you rinse it with fresh water?

This recipe using the reverse sear approach produces tasty, moist roast pork. After having some for dinner, I like to refrigerate the rest and cut into as thin as possible slices for sandwiches.

I have also done the "sear" in a hot cast iron frying pan with great results.
