<p><span style="font-family: arial;">When I looked through the chosen recipes for January for <a href="https://tuesdayswithdorie.wordpress.com/2022/01/25/bwd-lyl-grain-and-seed-muffins-or-stephs-bakewell-tart/">Tuesdays with Dorie </a>I saw that the Bakewell Tart was on the list. After looking through the recipe I realized it sounded familiar. In fact, I had seen this once before, on the CBC <a href="https://www.cbc.ca/life/greatcanadianbakingshow/recipes/bakewell-tart-1.5947184#:~:text=The%20Bakewell%20tart%20is%20a%20British%20classic.,Canadian%20Baking%20Show%2C%20Season%204.">Great Canadian Baking Show</a> (Season 4, pastry) for one of the technical bakes!</span></p>
<p><span style="font-family: arial;">But, what is a Bakewell Tart? The Bakewell tart is a British classic dessert and usually has a short crust pastry, frangipane and jam (typically raspberry). From what I have read, there can actually be different variations.&nbsp;</span></p>
<p><span style="font-family: arial;">To me, it feels like you you are mixing the essence of a pie and cake together. Perhaps that simplifies it a bit, but let&#8217;s go into how it went for me.&nbsp;</span></p>
<p><a href="https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart-full.jpg" style="margin-left: 1em; margin-right: 1em; text-align: center;"><img decoding="async" class="wp-image-285" alt="Full bakewell tart in a glass pie dish" border="0" data-original-height="1638" data-original-width="2048" height="512" src="https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart-full-1024x819.jpg" title="top layer of the bakewell tart" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart-full-1024x819.jpg 1024w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart-full-300x240.jpg 300w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart-full-768x614.jpg 768w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart-full-1536x1229.jpg 1536w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart-full.jpg 2048w" sizes="(max-width: 640px) 100vw, 640px" /></a></p>
<p><span style="font-family: arial;">To make the recipe in Dorie Greenspan&#8217;s <i>Baking with Dorie </i>you first make a pie crust. Hers is a pate sucree (mixture of cold butter, flour, egg and sugar).&nbsp; The dough is then rolled out into an 11inch circle, then partially blind baked (where you add pie weights onto the crust &#8211; to keep it from bubbling up in the oven).&nbsp;</span></p>

<div class="separator" style="clear: both; text-align: center;"></div>
<div class="separator" style="clear: both; text-align: left;"><span style="font-family: arial;">This ended up being a baking project spread over two time periods as I started making my pie crust a bit too late. By the time it finished cooling it was too late to make the rest of the pie. So I waited until the next day. Once the pie crust has cooled, add a layer of jam to the bottom. Traditionally it is raspberry jam. I used Haskap Jam as I am making an effort to use what I have in our pantry. Haskap berries are similar in taste to saskatoon berries. But if you don&#8217;t have saksatoon berries in your area, think of haskap tasting like blueberries, raspberries, with some flavours of black current.&nbsp;</span><span style="font-family: arial;">My friend Carmen had gifted me this for Christmas so thought this would work nicely for the Bakewell Tart.&nbsp; After the layer of jam, the rest of the filling is added on top. It is a bit difficult to spread but not impossible.&nbsp;</span></div>

<div class="separator" style="clear: both; text-align: center;"></div>
<div class="separator" style="clear: both; text-align: left;"><span style="font-family: arial;">Once the tart is fully baked (around 45 min at 375F), allow it to cool.</span></div>

<div class="separator" style="clear: both; text-align: center;"></div>
<div class="separator" style="clear: both; text-align: center;">
<div style="text-align: left;"><span style="font-family: arial;">At this point, you can decorate with just a drizzle of icing (icing sugar mixed with water). However the first time I decorated my Bakewell Tart it turned out terrible. So in an effort to make it more aesthetically pleasing (for myself) I added icing all over the tart and then attempted to make some pink lines for a feathering effect. That didn&#8217;t go nearly as well as I had hoped but it looks decent!&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: center;"><a href="https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart_full.jpg" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-291" alt="bakewell tart all finished and iced with white icing and feathered lines in pink icing" border="0" data-original-height="1638" data-original-width="2048" height="512" src="https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart_full-1024x819.jpg" title="bakewell tart all finished and iced" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart_full-1024x819.jpg 1024w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart_full-300x240.jpg 300w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart_full-768x614.jpg 768w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart_full-1536x1229.jpg 1536w, https://www.beyondumami.com/wp-content/uploads/2022/01/Bakewell-tart_full.jpg 2048w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<p></div>
<p><span style="font-family: arial;">In all honesty, if this was a real technical bake in a real baking challenge I would have failed on the presentation alone. My feathering (for the lines) did not go very well as I was trying to work fast as the icing was starting to set!&nbsp;</span></p>
<p><span style="font-family: arial;">I love how tasty this Bakewell Tart is. It isn&#8217;t too sweet, despite the icing on top and the haskap jam went very well with the rest of the tart. The cake part of the tart has a nice almond flavour from the almond extract as well as the addition of almond meal and flour. I personally also love the nice crispy pate sucree crust at the bottom as it is my favourite part about pies. So, there you have it, my experience of baking up my first Bakewell Tart!&nbsp;</span></p>
<p><span style="font-family: arial;">You can get the recipe for Steph’s Bakewell Tart on pg.298 of Baking with Dorie or <a href="https://cooking.nytimes.com/recipes/1018826-stephanie-johnstons-bakewell-tart">here</a>.<br /></span></p>

<p><span style="font-family: inherit;">Wow, time is flying by. Sorry that I have been neglecting the blogging part lately, though, rest assured I am still doing a lot of baking and recipe testing over on <a href="https://www.instagram.com/beyondumami/">Instagram.</a>&nbsp;After this post, I hope to work on a macaron post!&nbsp;</span><span style="font-family: inherit;">I have been spending some time working on my photography skills, photo editing and making pottery (for food props and more!). Creating my own pottery and glazing them in all sorts of fun colours have been a recent obsession of mine. If you look through these photos you will see some of my pottery pieces!&nbsp;</span></p>

Speaking of creating, this week&#8217;s Cook the Book Fridays brings us to making (if you choose) your own pie dough for making a galette. A galette is essentially a rustic pie of sorts and describes any sort of flat, round or free form cake/pie. The recipe we are all cooking from this week for <a href="https://cookthebookfridays.wordpress.com/2019/06/14/lyl-mushroom-bacon-galette/#comments">Cook the Book Fridays </a>is <a href="https://doriegreenspan.com/">Dorie Greenspan&#8217;</a>s Mushroom Bacon Galette from her Every Day Dorie Cookbook.&nbsp;</div>

<p>Making the pie dough is a breeze. Just process flour, sugar, salt and butter in the food processor until slightly lumpy (as above). Then, roll the pie dough out until it is a wide flat circle. Next, place the dough between two sheets of parchment paper in the refrigerator for at least an hour before using.</p>

For ingredients, Dorie uses Mushrooms, Leek, Green Onion, Onions, Bacon and the addition of walnuts! The walnuts certainly gives the galette a distinctively crunchy bite.<br />

<p>The main ingredients of leeks, green onions, onions and mushrooms are cooked down in a pan before walnuts, bacon and cheese is mixed in.<br />
<a href="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1035094574317189382033.jpeg" imageanchor="1" style="margin-left: 1em; margin-right: 1em; text-align: center;"><img loading="lazy" decoding="async" class="wp-image-666" border="0" data-original-height="897" data-original-width="1600" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1035094574317189382033-1024x574.jpeg" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1035094574317189382033-1024x574.jpeg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1035094574317189382033-300x168.jpeg 300w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1035094574317189382033-768x430.jpeg 768w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1035094574317189382033-1536x860.jpeg 1536w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1035094574317189382033.jpeg 2048w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a><br />
Then a splash or two of some dry white wine followed by some heavy cream to give the filling additional flavour.</p>
<div class="separator" style="clear: both; text-align: center;">

<div class="separator" style="clear: both; text-align: left;">
Prepping of the filling for the mushroom bacon galette can be done all ahead of time if you wish or use the ingredients immediately after cooking. Just slide the pie dough out of the fridge, remove the top layer of parchment paper and place the filling into the middle of the galette.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1000996574883092165724.jpeg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-668" border="0" data-original-height="897" data-original-width="1600" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1000996574883092165724-1024x574.jpeg" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1000996574883092165724-1024x574.jpeg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1000996574883092165724-300x168.jpeg 300w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1000996574883092165724-768x430.jpeg 768w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1000996574883092165724-1536x860.jpeg 1536w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1000996574883092165724.jpeg 2048w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<p>
The beauty of a galette is that nothing has to be perfect. Just quickly fold in the dough and it will naturally crease as you go. If it rips, that&#8217;s okay too! The dough is so forgiving that no one will notice once it is baked. Everything comes together so fast that you are able to do other things in between. In fact, we had a guest over for dinner and we did all of the dinner prep (and photography shots) while we snacked on appetizers and entertained.</p>

<div class="separator" style="clear: both; text-align: left;">
Dorie says to bake the galette for at least 30 minutes or until browned. For us, our galette baked for approximately 45 minutes before it started to brown. This may have been due to the dough being so cold? Of course, another sprinkle of cheese was added before the mushroom bacon galette was served!&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1049691575471787411176.jpeg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-671" border="0" data-original-height="896" data-original-width="1600" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1049691575471787411176-1024x573.jpeg" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1049691575471787411176-1024x573.jpeg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1049691575471787411176-300x168.jpeg 300w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1049691575471787411176-768x430.jpeg 768w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1049691575471787411176-1536x860.jpeg 1536w, https://www.beyondumami.com/wp-content/uploads/2019/06/1306-2019-1049691575471787411176.jpeg 1769w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<div class="separator" style="clear: both; text-align: left;">
Knowing that I can just use a food processor to make galettes I will certainly make more in the future. My mushroom bacon galette came out a bit sweeter than expected, so I am thinking I will have to tone down the sugar in the dough the next time I make a savoury galette. This pie dough will work well for sweet galettes this summer as well. Plus, with it being more a rustic style, I don&#8217;t have to worry so much about my pie being &#8220;perfect&#8221;.&nbsp;</div>
<p>
Now that you know how easy it is to make this mushroom bacon galette, you should make one too!&nbsp; Also, check out how everyone else from <a href="https://cookthebookfridays.wordpress.com/2019/06/14/lyl-mushroom-bacon-galette/#comments">Cook the Book Fridays</a> did with this galette!</p>

<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: inherit;">Wow, is time flying by fast or what? I can&#8217;t believe it is already May, which means it is time for another <a href="https://cookthebookfridays.wordpress.com/">Cook the Book Fridays</a>&nbsp;following Dorie Greenspan&#8217;s Every Day Dorie Cookbook. This week brings us to page 80 and her Green-As-Spring Soup. I was seriously hoping that by the time I blogged this post I could confidently say that Spring has come &amp; sprung here in Ottawa. Sadly, it seems to me that I have moved to a rainy city. I think I need to invest in a rain coat soon. Of course, after gathering all the items for this green soup last week at Farm Boy (which is apparently my newest obsession for purchasing veggies), I walked back into winter flurries and rain.&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: inherit;"><br /></span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: inherit;">The recipe for Dorie&#8217;s Green-As-Spring Soup uses many fresh veggies including a slim zucchini, 2 large stems of leek, fresh basil, garlic and shallot.&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01027253095070504908589.jpeg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-1647" border="0" data-original-height="897" data-original-width="1600" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01027253095070504908589-1024x574.jpeg" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01027253095070504908589-1024x574.jpeg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01027253095070504908589-300x168.jpeg 300w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01027253095070504908589-768x430.jpeg 768w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01027253095070504908589-1536x860.jpeg 1536w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01027253095070504908589.jpeg 2048w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<p>I prepped all the ingredients according to Dorie&#8217;s instructions. After the prep, I realized that I didn&#8217;t have a big enough stove top pot, so I used my instant pot on saute mode for most of the recipe. The recipe is fairly straightforward. First, you start cooking shallot and garlic in hot butter and oil. Then sliced and cut leeks are added in and cooked until softened but not browned.<br />
<a href="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01237103094791490268904.jpeg" imageanchor="1" style="margin-left: 1em; margin-right: 1em; text-align: center;"><img loading="lazy" decoding="async" class="wp-image-1648" border="0" data-original-height="897" data-original-width="1600" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01237103094791490268904-1024x574.jpeg" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01237103094791490268904-1024x574.jpeg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01237103094791490268904-300x168.jpeg 300w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01237103094791490268904-768x430.jpeg 768w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01237103094791490268904-1536x860.jpeg 1536w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01237103094791490268904.jpeg 2048w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></p>
<p>Next, 5 cups of chicken stock followed by sliced zucchini, asparagus and two sprigs of basil. I also added in a few pinches of salt at this point as the chicken stock I used was an organic no sodium one.</p>
<div class="separator" style="clear: both; text-align: left;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01069043094594684818354.jpeg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-1649" border="0" data-original-height="896" data-original-width="1600" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01069043094594684818354-1024x573.jpeg" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01069043094594684818354-1024x573.jpeg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01069043094594684818354-300x168.jpeg 300w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01069043094594684818354-768x430.jpeg 768w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01069043094594684818354-1536x860.jpeg 1536w, https://www.beyondumami.com/wp-content/uploads/2019/05/1005-2019-01069043094594684818354.jpeg 2000w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<p>Once all the veggies have softened up and the chicken stock has started to bubble, carefully spoon the soup into a blender or food processor. Then blend away! Dorie says to keep blending until you think you are done and then blend a little bit more for a smooth green soup.</p>
<div class="separator" style="clear: both; text-align: center;">

<p>When serving, scoop a dollop of greek yogurt into the middle of each bowl, followed by a squirt of lime juice and some basil!</p>

<p>
I loved how fresh this soup tasted. Plus it was rather hearty! Dan and I both had a bowl of soup and still had enough for soup the next day. The colour does change in vibrancy, but otherwise the taste is the same. Since I had made it in the instant pot to begin with, I could easily pour the blended soup back into the Instant Pot and set it on slow cooker mode until Dan came home from work. The soup (without the yogurt topping) would also be a great soup to serve for guests that are gluten or dairy free.</p>
<p>Dan also had his soup the next day with some sliced smoked cheddar. That was also super delicious. Overall, a great soup to have in the recipe banks. Plus, it really is a breeze to pull together. Go see how everyone else from Cook the Book Fridays thought about the soup <a href="https://cookthebookfridays.wordpress.com/2019/05/10/lyl-green-as-spring-soup/#comments">here</a>.</p>

<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: inherit;">I finally managed to catch up with everyone else participating&nbsp;</span><a href="https://cookthebookfridays.wordpress.com/" style="font-family: inherit;">cook the book Fridays</a><span style="font-family: inherit;">&nbsp;&#8211; Every Day Dorie. The recipe this time is Dorie Greenspan&#8217;s Potato Tourte on page 220. I must say that I did a lot of walking to gather all the ingredients for this recipe! Our friends helped us with the main grocery run, but then I had to walk back to the store <i>twice</i> to pick up ingredients that I forgot! As you can see there aren&#8217;t too many ingredients needed in this recipe. The main </span>ingredient<span style="font-family: inherit;">, of course, is the 2.5 lbs of potatoes!&nbsp;</span></div>
<div class="separator" style="clear: both; text-align: left;">
</div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7625-282-29.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-200" alt="ingredients for making the potato tourte" border="0" data-original-height="781" data-original-width="1024" height="488" src="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7625-282-29.jpg" title="" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7625-282-29.jpg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7625-282-29-300x229.jpg 300w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7625-282-29-768x586.jpg 768w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<div class="separator" style="clear: both; text-align: left;">
</div>
<p><span id="more-198"></span></p>
<div class="separator" style="clear: both; text-align: left;">
For this recipe I chose to use fresh sage, rosemary and green onions. Dorie also suggests that tarragon, parsley, dill, and chives can be used as other herbs for the potato tourte.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7629-281-29.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-201" alt="rosemary, sage, lemon zest in a dark blue bowl" border="0" data-original-height="622" data-original-width="1024" height="388" src="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7629-281-29.jpg" title="" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7629-281-29.jpg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7629-281-29-300x182.jpg 300w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7629-281-29-768x467.jpg 768w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<div class="separator" style="clear: both; text-align: left;">
The rolling out of the puff pastry went fairly well. You just need to remember to have a ruler of sorts in order to make sure that they are the right size. I ended up using a small tape measure.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7627-281-29.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-202" alt="beginnings of the potato tourte" border="0" data-original-height="575" data-original-width="1024" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7627-281-29.jpg" title="" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7627-281-29.jpg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7627-281-29-300x168.jpg 300w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7627-281-29-768x431.jpg 768w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<p>The recipe calls for slicing the potatoes in a mandolin or to cut them to approximately 1/16 inch thick. Using a mandolin made slicing consistently much easier! I borrowed one from a friend in order to do this part of the recipe. Definitely use one if you are able to get access to one as it makes this part of the recipe preparation super quick.</p>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7633-281-29.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img loading="lazy" decoding="async" class="wp-image-203" alt="sliced pieces of potato in a metal colander " border="0" data-original-height="575" data-original-width="1024" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7633-281-29.jpg" title="" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7633-281-29.jpg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7633-281-29-300x168.jpg 300w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7633-281-29-768x431.jpg 768w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a></div>
<p>Making sure all the ingredients are prepped (washed &amp; cut) ahead of time will help with the assembly of the entire potato tourte because all the pieces will be ready and all you have to do is put it together. Layer herbs, followed by potato slices, garlic, butter pieces and repeat!</p>
<div class="separator" style="clear: both; text-align: center;">

<p>I prepped my potato tourte to the point where I topped the top crust and cut the air vent. Then I wrapped the potato tourte with saran wrap and refrigerated the tourte to be baked up for dinner the next day.&nbsp;<a href="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7639-281-29.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em; text-align: center;"><img loading="lazy" decoding="async" class="wp-image-205" alt="puff pastry topping for potato tourte" border="0" data-original-height="575" data-original-width="1024" height="358" src="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7639-281-29.jpg" title="" width="640" srcset="https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7639-281-29.jpg 1024w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7639-281-29-300x168.jpg 300w, https://www.beyondumami.com/wp-content/uploads/2019/03/IMG_7639-281-29-768x431.jpg 768w" sizes="auto, (max-width: 640px) 100vw, 640px" /></a><br />
The next day, I took the potato tourte out of the fridge an hour or so before I baked it. I did this to make sure that the heat differentiation would not cause the pie dish from breaking in the oven (which has happened to me in the past!). Egg washed and then popped into the oven at 400F for 45-60 min.</p>

Success! This potato tourte turned out beautifully! It smelled amazing as it baked up in the oven. Oh and that puff pastry crust? Delicious.&nbsp;</div>

<p>
The layers of the potato tourte! Turns out there were at least 9 layers of potatoes in there! The one difference is that after the tourte has baked for almost an hour, you take it out and then gently pour in 1 cup of heated cream. It&#8217;s amazing how the cream is able to just flow between all of the layers.</p>

<p>I would most definitely make this potato tourte again. Though next time, I am thinking I&#8217;ll have to use a different herb. Don&#8217;t get me wrong, sage and rosemary go perfectly well with potato but I am thinking the sage that I used was super fragrant and seemed to overtake the flavour in the tourte. Mushrooms would certainly go well in this potato tourte, which I intend to try next time!</p>
