Easy Cast-Iron Shakshuka with Feta!

As I was processing the photos for this post, I tried recalling when I first had Shakshuka and for some reason I just can’t picture it. Maybe it’s because each time we make and share this with friends, our friends then share their first memory of shakshuka and it all blends together. I do recall how enamoured I was by how a dish with simple ingredients becomes so flavourful! Since that time period, I have seen Shakshuka literally everywhere! Sometimes you might see Shakshuka under a different name like Eggs in Purgatory. However, the essence of the dish is all the same. It is essentially cooking whole tomatoes with onions and spices in a skillet or cast iron and slowly poaching your eggs in said delicious sauce. This makes it easy to add your personal twists to the dish making a great comfort food.

Here is a version of our Shakshuka topped with feta cheese. Typically you would top your Shakshuka with parsley but I only had green onions on hand that day when I made this particular shakshuka.

Recipe for Shakshuka with Feta (serves up to 4 people)

Ingredients

2-3 tablespoons of olive oil

2 yellow onions; diced

3 cloves of garlic, sliced

2 cans of whole tomatoes

2 tsp of smoked paprika

1/4 tsp salt, more as needed

1/4 tsp pepper, more as needed

1 tsp of sugar

4 large eggs

1/4 cup crumbled feta

handful of chopped flat leaf parsley or green onion

Directions

Heat olive oil in a large skillet for approximately 2 minutes.

Add garlic slices, stir until onions become soft and translucent (approx. 8 minutes).

Add onions, with a pinch of salt & pepper. Stir for 1 minute.

Stir in smoked paprika with the cooked onions and garlic until it all

Slowly pour in the cans of whole tomatoes. Gently crush tomatoes until both cans are added into the skillet. Mix in the sugar and simmer sauce until it thickens (approx. 12 minute)

Once sauce has thickened, make 4 wells in your sauce and crack eggs into the wells.

Allow eggs to simmer until the whites are set but the yolks are still runny. I prefer mine to be sunny-side up, but you could also baste the eggs (by gently pouring sauce over) as they cook.

Turn off the heat, crack with pepper & salt. Scatter feta and green onion (or parsley) all over.

Serving Shakshuka with a good bread; home-made or artisanal helps to sop up all the sauce. For this particular meal, we had it with a home-made cheese sourdough that my hubby had made. I’ve also served our shakshuka with quinoa.

The beauty of the Shakshuka is that it is perfect for any occasion. I hope you make this Shakshuka too and create more amazing food memories with friends and family.

A recipe for Crispy Gluten Free Rice Flour Waffles for brunch, lunch or make-ahead meals.

Breakfasts and brunch for me never seem quite complete until I have a crepe or waffle on my plate. So you can imagine how sad I felt when I learned that I had gluten sensitivities. Stacks of waffles with delicious toppings appeared to be far from my reach. I can confidently say that after many experiments of varying success, Dan and I now have an easy waffle recipe that is not only simple but more importantly tastes like a regular crispy Belgian waffle (crispy outside, fluffy inside).

Our previous waffle recipe was a yeasted batter that involved folding batter into egg whites while this one has no yeast, no folding, and no flour but all the taste. The other thing about this particular gluten-free recipe is that it doesn’t require any of the gums that are needed for gluten free recipes. Even though it has the word “glutinous” in it, glutinous rice flour is a made from grinding a type of sticky rice (pure rice, which contains no gluten). Glutinous rice flour can be found at most major grocery stores and definitely in most Asian grocery stores.

Add in vanilla extract.

Repeat until all the batter is finished.

After some experimenting, we have found this version of our recipe to work the best. We have been making a double batch of waffles as they freeze so well. Just put a layer of parchment paper between each waffle before you put them in a freezer bag. I have found that approximately 3 waffles will fit per large freezer bag. When you want to eat the waffles, just reheat them in the waffle iron, toaster oven or in the oven. Ultimately, these waffles are our perfect make ahead breakfast or brunch!

Funny story before I end this post. One morning, Dan made a double batch of these waffles and had them resting on a cooling rack on the dining room table. Then, Chris (my brother in law) and Kyla (his dog) came home. Chris and Dan were busy talking in the kitchen, but the next thing they saw was Kyla walking back into the kitchen with a huge waffle in her mouth! Turns out Kyla, despite being a 10 year old dog and having trouble with her hips, knew that those waffles smelled amazing and jumped up high enough to snag a waffle. I wish they took a photo as that would have been quite the picture to end this post. So with that being said, these waffles are seriously delicious and you must make them too!

We have always liked making crepes, but to make a gluten free version was more than just simply swapping out flour with buckwheat. It required quite a few experiments and the end result is a straight-forward recipe that requires only four ingredients. That’s right FOUR! Unlike other gluten-free recipes that use xanthan or guar gum, this recipe is really simple in terms of ingredients and steps. The basic ingredients are just: Milk, Eggs, Buckwheat Flour, and Oil. That’s it!

This recipe is based on a volumetric ratio instead of a weight-based ratio. That means you don’t need to use a scale. Instead, just half an egg shell and a 1/4 measuring cup will do. See what we mean in the video that we created below:

Gluten Free Buckwheat Crepes Recipe

Yield: 3 eggs made 9 crepes (the size of a dessert plate).

Time: 30-45 minutes

Crepe Ingredients:

3 Eggs

2% Milk

Vegetable Oil

Approx. 1/4 Cup Light Buckwheat flour

ChocoVine (Optional – used for flavouring. Other flavourings such as Grand Marnier or a tablespoon of vanilla extract can also be used)

Instructions

Crack eggs into bowl.

Reserve one half of an egg shell.

Fill the half egg shell with milk and pour into the bowl.

Repeat the previous step 5 more times.

Fill one half egg shell with oil and pour into the bowl.

Beat the egg, milk and oil together until well combined.

Pour about 1/4 Cup of buckwheat flour into the mixture and whisk well.

Pour in 1 shot glass of Chocolate ChocoVine (this is optional).

You may need to add a bit more flour (by the teaspoon) until the mixture is thick enough and flows a bit slower than water (like oil).

Heat up a small frying pan or skillet (we used an 8 inch one) on low-medium heat.

Add half a teaspoon of oil to the frying pan.

Use a paper towel to evenly spread the oil around (even if using a non-stick pan, it is advisable to coat the pan).

Mix crepe batter again to make sure that the buckwheat has not sunk to the bottom.

Scoop 1/4 cup of batter into the frying pan. If you see the batter vigorously sizzling initially, than the pan is too hot. Remove the pan from heat for a few minutes and turn down the heat.

While batter is still runny, tilt the pan around in order to evenly spread the batter.

The crepe is ready to be flipped when the edges of the crepe lift up a bit or the top surface of the crepe is almost dry.

Cook for another 10-15 seconds and remove crepe from pan.

Repeat steps 12 through 17 until all the batter is used.

Butter Sauce

We also wanted to try our hand at making a crepe cake and then drizzle butter sauce on top. A quick short story: our initial trial of a butter sauce recipe ended in a disaster as one of the recipes we tried involved mixing in egg yolk into hot melted butter! You can imagine what was the end result – buttered scrambled eggs instead of a sauce! The following recipe is not only easier but tasty without any scrambled egg bits.

Yield: Approx. 1/4 cup of sauce

Time: 10 minutes

Crepe Ingredients:

2 Tablespoons of Butter

2 Tablespoons of Cream

4 Tablespoons of Sugar

1 Tablespoon of Vanilla ChocoVine (Optional – used for flavouring, you could use another liqueur such as Grand Marnier, or a tablespoon of vanilla extract)

Instructions

In a small pot at low heat melt butter, sugar, and cream.

Add in 1 tablespoon of the Vanilla ChocoVine (optional).

Stir until well combined.

You can assemble the crepes into a stack like we did and then pour the butter sauce on top. In terms of taste, there is no grassy taste of buckwheat. The crepes are super soft and flexible as you can see in the video and in the photos. You could also choose to spread nutella between each crepe layer and then pour the butter sauce on top, but we opted for just the butter sauce this time. The buttersauce with the addition of the vanilla ChocoVine wasn’t too sweet or heavy, it still maintained its butteriness while giving you a hint of vanilla chocolate and white wine.

A few weeks ago, Giselle from Duchess Bake Shop mentioned to me that plans were underway for a pop-up featuring their upcoming brunch bistro restaurant – Café Linnea. As I love brunch, this pop-up certainly piqued my interest! When the tickets for the pop-up were released time slots were quickly filling up and yet I somehow managed to score a ticket for the 6:45pm seating.

Yup, you read that right I got ONE ticket. For any kind of dining out, I have always had at least a dining partner (usually Dan) to accompany me. I have never done something like this by myself before and that is when it dawned on me that I could potentially be eating alone. Visions of sitting by myself at table for one quickly filled my mind. Even though, Dan tells me that he has eaten many times by himself, it is not something that I find in my comfort zone. Of course, there is nothing wrong with eating by yourself, but I felt that I needed to confirm with the planners that this would be ok. To my pleasant surprise, I found out that I would seated at a table with Giselle of all people! Although I’ve briefly chatted with Giselle at some events, I’ve never had a chance to have a conversation over dinner with her, and I never imagined that it would happen this way.

Café Linnea is a partnership between the Duchess Bake Shop and Chef Kelsey Johnson. The dishes on their pop-up menu hinted that their future menu may be a blend of both Scandinavian and French cooking. This pop-up was a chance for them to try out their dishes and for the waiting staff to do a trial run.

I ordered the Salmon Galette which was composed of 3 buckwheat crepes layered with ricotta, cured salmon and topped with a poached egg, tarragon and asparagus. The buckwheat crepes were thin and tasty and somehow, it almost felt like there was a touch of cinnamon that came through.

I had only ordered the crepes but when the dishes for two other main items arrived I began to feel a bit of regret that I had limited myself to one main! The Oeufs-en-Cocotte looked delicious with its hidden treasures of morel mushrooms underneath the white poached eggs. The Oeufs-Cocotte also came steaming hot in a personal sized Cocotte (a French oven).
I had an enjoyable night meeting new people and getting to know some of the “behind-the-scenes” people from Duchess and also at Café Linnea. The Café will likely seat about 60 and is part of the new plans coming to the Holland Plaza area (10939 120 Street) where there will be a larger Provisions, office space for Duchess and eventually a teaching kitchen. Café Linnea is approximately 5 blocks east of where Duchess is located. Garner Beggs, one of the owners of Duchess, also mentioned that since they are doing everything by hand, they are working hard on hoping to open the new restaurant by mid-July.

From the dishes that I saw and tasted at the pop-up, I’m certain that Edmonton will definitely receive Café Linnea as they already have with Duchess Bake Shop with open appetites and long lines! The restaurant plans to open on the weekends and during the week with the exception of Tuesday and Wednesday. Hours are likely to be from 9-3pm.

One of the interesting things is the note at the bottom of their pop-up menu indicating that they will be a no-tipping restaurant. This is very interesting as this is more European style and to my knowledge, there are no other restaurants in Edmonton that follow this philosophy.

I look forward to their opening in the next few weeks. One thing is for sure, I will be ordering the Oeuefs-en-Cocotte this time round and bring the hubby or a few friends to share the dishes!

Aren’t these mushroom shaped potatoes the cutest? A few weeks ago, EarthFresh Foods sent me some of their potatoes to try. I received their organic yellow baby potatoes in the mail (yes! potatoes by mail!). For a little over a week, I couldn’t quite figure out what to do with them. Then one Saturday morning, inspiration hit! Admittedly I was also craving brunch food items and was starting to get hungry.

These mushroom looking potatoes can be created from any type of baby potatoes and would be perfect for a quick breakfast or as a side dish for dinner.

Carving the Potato Mushrooms

Wash and dry the baby potatoes. You can leave the skin on for these potatoes. First make a small cut down one side of the potato. Turn the potato and make another parallel cut (2nd cut). Next, turn the potato again and make a 3rd cut (this will be perpendicular to the first cuts). Make another cut slightly away for the 4th cut but parallel to the 3rd cut.

Then, gently run your knife around the base of the cuts to create the stem of your potato mushroom.

Here is the final result!

We also made a quick video to help demonstrate the creation of these potato mushrooms. This might be easier to visualize.

Cooking the Potato Mushrooms

Place the cut potato mushrooms including the square bits (your potato hash) into a bowl. I poured a tablespoon or two of some rosemary olive oil that I had made this summer and mixed it into the potatoes along with a sprinkle of salt and pepper.

Cook the seasoned potato mushrooms in a cast iron pan or bake them in the oven for 15-20 minutes.

Serve your potato mushrooms along with your choice of breakfast or brunch food items or as a side dish for dinner.

<img loading="lazy" decoding="async" class="wp-image-2736" alt="the finished mushroom potatoes in a white bowl.

I have found that EarthFresh foods is also sponsoring a pretty cool giveaway until May 31, 2016 at this link. In the meantime, I am hoping that you have a chance to try making these potato mushrooms yourself!

My experience baking Duchess' croissants.

The above picture depicts some beautiful croissants that I not only baked, but made from scratch! So, you are probably thinking this is something I do every once in a while considering my love for macarons and complicated baked goods. However, I must say this picture also represents the very first time I have ever baked croissants – unless you count those Pillsbury ones that we used for the homemade cronut post. Like every great picture there is a backstory and this picture is no exception to that rule.

Back in November 2014, I had the very exciting opportunity to attend the launch of Duchess Bake Shop’s cookbook. While Giselle was introducing the cookbook she mentioned how some recipes were easier than others such as the Ginger Cookies and some were more challenging such as the macaron recipes and the croissants. At that moment, the thought occurred to me that I had to bake the Duchess croissants.

Several months later, around our dinner table a few friends and I decided that it would be fun to do a croissant bake-off. Yes! A croissant bake-off where each person would choose a different croissant recipe to bake from and then we would time them all to bake-off around the same time for maximum freshness (more on that in the next post). For now, here are some notes and pictures from my experience baking the Duchess croissant.

The first thing to do was to make the starter. So I measured out the yeast and warm water. While that was dissolving, I added in some bread flour and then let it rise. Then, I measured out some butter, sugar and salt and added that directly to the starter.

Next, I placed the starter in an air tight location (I usually set it inside the microwave) so it could grow some more. After about 30-45 minutes, the starter was ready to use! I moved the starter to the mixing bowl, added in the milk and all purpose flour and mixed it at low speed. It should all come together and look like this (below).

Once the dough was made, I placed it into a oiled bowl and let it rise for about 90 minutes. Meanwhile, the butter plaque had to be made! The butter plaque has to fit nicely into the dough (like a package). This step took a little bit of measuring, hence the measuring tape.

The Duchess recipe book had a great suggestion to create a nicely shaped butter plaque using a resealable plastic bag. I didn’t quite have the same dimensions for the bag specified in the recipe but I measured it out to be approximately the right size for the butter plaque. The recipe in the book also has some easy to follow instructions for how to make this.

By the time I finished making the butter plaque and placed it into the fridge to keep cold, the dough had doubled in size and was ready to use. For Christmas, I got Dan a marble rolling pin and it is probably the best kitchen item we have bought! The heavy weight makes rolling the dough out a breeze! Honestly, getting the dough to the size I needed to fit the butter plaque in took no time at all. Dan can attest to this as he had previously used a light wooden rolling pin for the cronuts.

One of the things that was different about this croissant recipe compared to others is cutting the dough in half- instead of folding. With the butter plaque firming in place, I squished the sides of the dough closed in order to keep the butter inside.

Next, came some more rolling, placing the dough back into the fridge (so the butter doesn’t melt) and specific folds such as the book fold and the single fold (sort of like folding a letter). The recipe in the Duchess cookbook is very detailed so it was quite easy to follow.

After all that, the dough rested in the fridge for another 40 minutes. By this time, I was getting tired as it was hitting close to 12am (I started this croissant baking later than expected at 8pm on a Friday). However, we had decided to bake off all of our croissants around the same time the next day, so I was determined to finish! This recipe is also a bit different compared to other recipes as there is less proofing time and folds other than the book and single fold.

I rolled out the dough to about my arm’s length and then scored triangles out. In order to have the characteristic crescent shape for this style of croissants (not chocolate or almond), you want to cut a small line at the base of each croissant before you roll.

The almost finished product! Here they are! Beautiful raw croissants. Once rolled, they sat overnight in the fridge under saran wrap.

In the morning, I took the tray of croissants out and placed them into the cold oven to continue proofing (approximately 1-2 hours). They should grow a little bigger.

Once we arrived at L & S’ house, we quickly whisked together a egg wash made from egg, salt and milk to brush over each croissant and popped my croissants into the oven!

After 18 minutes of baking at 425F in L & S’ oven, my croissants were done!

When my husband and I made the Taiwan Red Bean Wheelcakes back in September, we were trying out various recipes that could be used on the Nordic Ware Eggs Plus Pan. One thing that you should know about my husband is that he is a huge proponent on ensuring that every single one of our kitchen gadgets must not be single function kitchen tools (with the exception of a can opener). This means that any kitchen gadget that lives in our kitchen must be able to be used for different recipes.

The first recipe we made with the new pan was actually not the Taiwan Red Bean Wheelcakes but instead Crustless Quiches!

So below is the recipe for the Crustless Quiches. Make sure you read all the way to the end for exciting details on how you can win the Eggs Plus Pan for yourself!

Crustless Quiches

Ingredients

approx. 1 cup of milk

4 eggs

3-4 filling ingredients such as tomatoes, onions, cheese, spinach etc.. The sky’s the limit!

Directions:

Dice up all the ingredients into smaller pieces as the quiche cooks fairly quickly.

Beat eggs and milk together in a bowl. Transfer the filling to a bowl with a spout and pour the egg mixture about half-way up each reservoir. Oiling each reservoir beforehand is optional (the pan is non-stick).

We tried putting the top on the pan initially, but realized that this would soften the quiches as the pan begins to cook with steam. If you want crispy quiches, leave the top off.
It goes without saying that having individual quiche creations is great. However, you could easily use the pan for multiple uses such as making two crustless quiches, a sunny side egg and sausage all in the same pan. The pan also has a little pamphlet that comes with further ideas on how to use it.

Or, you could always make the Taiwan Red Bean Wheelcakes from my previous post!

I am a huge advocate of the public library; specifically here in Edmonton I am fortunate to have access to the Edmonton Public Library; which carries many books including ones of food! So, I was super excited to come across a book titled “I Love Cinnamon Rolls!” by Judith Fertig. I’ve been looking for a book about Cinnamon Buns and rolls for a while now, so this was perfect.

Looking through the book my husband and I came across a recipe for Cinnamon Rugelachs. They looked like cute mini croissants and I was drawn to their rolled up shape. Actually, rugelachs in Yiddish means “little twists” and are typically made of a sour cream yeast dough. Thankfully, the prep time for making these rugelachs are not as labour intensive in comparison to making croissants.

Rugelachs use a thin strudel dough recipe. The original recipe uses a walnut filling; whereas I used roasted finely ground hazelnuts. I love the smell of roasted hazelnuts! Below is the recipe for these delicious cinnamon hazelnut rugelachs.

Ingredients for Thin Strudel Dough

1/4 cup whole milk

1/2 cup sour cream

1/2 cup unsalted butter (softened)

2 tbsp granulated sugar

1 tsp. salt

2 large eggs

3 1/4 cups of all purpose flour (with more for kneading dough)

2 1/2 teaspoons instant yeast

Ingredients for Cinnamon Rugelach Filling

1/4 cup finely ground and roasted hazelnuts

1/2 cup packed light brown sugar

1 tbsp. cinnamon

Egg wash (1 large egg beaten with 1 tsp. water)

Directions:

In a mixing bowl combine the milk, sour cream, butter, sugar, and salt. Microwave on high heat for 90 seconds or until warm. Whisk in the eggs.

Place flour and yeast into the bowl of a stand mixer with the paddle attachment. Add in the ingredients from step 1 (milk, sour cream, butter, sugar, salt, eggs). Mix on low speed until the dough forms a soft ball. Scrape down the sides of the bowl as needed. This should take 5-6 minutes.

Switch to the dough hook and keep the mixer on low. To keep the dough from sticking to the sides of the bowl sprinkle the dough with flour from time to time. Allow to knead for 3-5 minutes.

To check if the dough is ready, stick a finger into the dough and see the dough spring back.

Take a large mixing bowl and oil it. Place dough into the bowl and cover with plastic wrap. Allow to rise in a warm draft-free place for 45 to 60 minutes. Typically we place our dough into the microwave as it is the most draft-free place in our place. Once the dough has doubled in size you are ready to start making the rugelachs.

Transfer the dough to a floured surface and cut into 4 parts. (We just purchased a Roll’Pat from Williams and Sonoma (similar) which works well for rolling out dough.)

Roll each part into a circle 12 inches in diameter.

8. To make the rugelach filling, if you don’t have ground hazelnuts toast about 1/2 a cup of hazelnuts. Then, allow the hazelnuts to cool before finely grinding in a food processor or a Magic Bullet. Combine the ground hazelnuts, cinnamon and brown sugar together into a bowl. Using a scale measure out 4 equal portions of the rugelach filling (you can also estimate by tablespoons as needed).

When I make these cinnamon rugelachs again I would double the rugelach filling as there was not enough filling to sprinkle on top before baking.

Below is the link to the book on amazon. I haven’t baked any other recipes yet from the book, however, so far I am happy with these cinnamon rugelachs. The rugelachs make a great snack during the day or when heated in the toaster oven are perfect to eat on the way to work in the morning. Have you baked any items from this book?

Today’s post comes from my desire to make a relatively healthy granola bar at home. Many times I was tempted to just buy a box from the store, but the one I had in my mind was filled with oats, cranberries, raisins and topped with chocolate! Plus, I wanted to make mine less sweet in comparison to store bought bars. Another instigator of wanting to bake ‘something’ is because I purchased an absolutely gorgeous Emile Henry baking dish recently – as can be seen in these pictures.

These bars were first introduced to me by my mentors P&R on sunday nights in London, Ontario when Pam would bring out what looked to us like Granola bars, but what she called ‘flapjacks’ in Britain. Ingredients

4 1/2 – 5 Cups oats

1 Cup craisins

dark chocolate or milk chocolate bars or chips (your preference)

Directions

In a heat proof bowl, mix sugar, butter, and corn syrup together. Melt in the microwave until it forms a consistent mixture.

Mix oats, raisins and craisins into the bowl.

Once all ingredients are mixed together, spread the mixture into a rectangular pan. Use a spoon to flatten.

Bake at 325F for 20-30 minutes.

Take out of oven.

Spread chocolate on top as it will be warm enough to melt the chocolate.

Allow to cool.

Cut into slices before it completely cools and hardens.

These flapjacks/granola bars can be stored in an airtight container in the fridge for up to a week.

Crepes are so versatile and easy to make, this is the recipe we use to make them.

Now that summer is finally here alternative dinner options are welcomed! Crepes are nice light fare and are perfect for summer! What I love about crepes is that they can actually be eaten savoury or, what we often see, sweet. The crepe recipe that we have gotten lots of mileage from in our household is the one from Jacques Pepin.

Ingredients

2 large egg

3/4 cup All purpose flour

1/2 cup milk

1/8 tsp salt

1/2 tsp. sugar

1/3 cup cold water

1 tablespoon canola oil

1 tablespoon melted unsalted butter + more for pan (we actually do not put butter in our batter but use it for cooking on the pan instead)

Directions

In a medium bowl whisk together the eggs, flour, milk, salt and sugar until smooth. The batter will be thick.

Whisk in the water, oil and melted butter (the butter can be skipped if you want)

Heat a 6-inch pan (or any flat pan- we use a stainless steel one) or a non stick skillet and rub with a bit of butter. Tilt the skillet to distribute the butter evenly.

Add about 2 tbsp of batter (we use a ladle to put in how much we need; as long as it thinly covers the entire pan). Tilt the skillet to distribute the batter evenly.
Pour away any excess batter back into the bowl.

Cook over moderately high heat until the edges of the crepe curl up and start to brown. approx. 45 sec.

Flip the crepe and cook for another 10 seconds, until a few brown spots appear on the bottom.

Tap the crepe out onto a baking sheet (or parchment paper)

Repeat with remaining batter to make up to 12 crepes. You may need to butter the skillet a few times as time progresses.

*note* heat low to medium heat first since you don’t want to burn the crepe too fast. Once you see the edges turn then it is ready to be flipped. You can make a whole stack of crepes by stacking one on the other. Cover with a towel/plate to keep them warm.

This recipe can be used to make savoury crepes by skipping the sugar and filling the crepes with slices of cheese, sandwich meat, spinach leaves, tomatoes, mushrooms and more!
